When I think of baked goods, the first thing that comes to my mind are cookies, cupcakes, and brownies. But when I came across lemon bars, my conception of baked goods completely changed. Regular baked goods are delicious, but sometimes I want something lighter and refreshing. That’s where my love for lemon bars began. These baked goods infused with lemons gives you that refreshing feeling. Its perfect for those hot summers or when you need something more juicy. Because having cookies or other baked goods with milk doesn’t cut it in the summer, but an easy lemon bar recipe does.

Easy Lemon Bar Recipe - Two Parts of Goodness

As delicious as lemon bars are, they are still easy to make. Some people search for the perfect lemon bars by using the best ingredients out there, something so simple like no bake lemon bars. I found an easy lemon bar recipe that puts together the shortbread for the crust and the lemon curds on top. Its surprising how the combination of two simple parts creates such an amazing treat.  The shortbread is light and fluffy enough that its there to support the lemon curd and not overpower. The lemon curd is tangy and sweet that gives it that refreshing feeling.

Sunday Baking makes this amazing recipe for easy lemon bar recipes that not only makes it simple to make, but in my mind, better than the classic. Its the shortbread that stands out to me. Like I mentioned before, shortbreads are light and fluffy. This adds to the light and refreshing nature of these easy lemon bar recipe. My other favorite part that makes it stand out is the thickness of the lemon curd. Others, like the classic lemon bars tend to be more flat and gives less lemon curd with each bite. Sunday Baking's Easy Lemon Bars

  • 4/5 cups All Purpose Flour
  • 4/5 cups Butter
  • 3 tbsp Sugar

Lemon Curd

  • 4 whole Eggs
  • 4/5 cup Sugar
  • 1 cup All Purpose Flour
  • 6 fl oz Lemon Juice


  • 1 tbsp Sugar Powder



  • Combine the all purpose flour, butter and sugar into a blender or food processor
  • Blend until smooth and mixed
  • Spread the mixture flat onto a pan
  • Bake for 25-30 minutes at 350 F

Lemon Curd

  • Squeeze fresh lemon juice through a strainer
  • Combine the eggs, sugar, all purpose flour, and lemon juice into a bowl
  • Whisk until a smooth and blended consistency
  • Pour the lemon curd on top of the shortbread
  • Bake again at 350 F for about 40 minutes


    Sprinkle sugar powder on top and cut into squares

      Lemon Bars - Small Bites of Citrus Delight

      I enjoy cutting these lemon bars into small squares, even smaller than ones shown in the video so i can have a small bite whenever I want. The perfect part of this is I still get all the goodness in one bite because of the amount of lemon curd on top. With tiny portions, I don’t have to worry about over indulging or given weird looks like for not finishing a whole cookie. 

      I tend to find lemon bars great for any occasion, but even better during the summer seasons because of how hot it can get. I constantly find myself dehydrated during the hot seasons and other baked goods like cookies makes it worse. This is where I truly appreciate lemon bars because of how refreshing the citrusy lemon curd taste and feels. 

      Starting with the shortbread, combine butter, sugar, and flour together. 

      Mix until they are blended. Chucks are okay. 

      Press it in a small pan to smooth and even out the surface. This will create the foundation for the lemon drops. Bake in the oven for 25-30 mins for 350 F (176 C). 

      Moving on to the lemon curd, squeeze lemon juice into a strainer to leave just the juice. The pulp would make for a less clean consistency in the curd. 

      Next mix together eggs, sugar, flour, and lemon juice. Whisk until it is smooth and well blended consistency. This will create the lemon curd. 

      Pour the lemon curd onto the top of the shortbread and put it back in the oven at 350 F (176 C) for about 40 mins.

      Sprinkle powdered sugar to finish the lemon bars. Cut it into squared-shapes or smaller bite-sized pieces.
