Payaya salad are one of those foods I never thought I would enjoy at first. My first impression was that I’m eating unripe fruits and raw vegetables. Imagine my surprise when I find out recipe for thai papaya salad includes just that. Its unripe papaya and an assortment of raw veggies thrown together. And that’s the thing that threw me off at first. Eating unripe fruits doesn’t sound appealing. Imagine eating an unripe strawberry or banana. There’s none of the sweetness and nothing that resembles the fruit you love. That’s also how I feel about raw vegetables as well. I know that salads with dressing are amazing, but I’d never thought that would be the case with something like green beans.

Love at First Taste with Papaya Salad

My first few times to Thailand, I found myself surrounded by new types of food, like papaya salad. I only had heard of this because in USA, there’s only pad thai. Again, papaya salad was not something I clamored to try, but passing by the food stands changed my mind. There’s always a long line, but Not only did the lines catch my attention, so was the process of making it. They grab a handful of nuts, raw veggies, mash them together with different sauces. Then they throw it all together with unripe papaya. Seeing it everyday, I  had to give it a try. Before you know it, this became a must-eat dish that I would get when visiting Thailand. But that was the thing, it would be hard to find something like this back home. So finding a recipe for Thai papaya salad became a must. 

Searching for such recipes, I stumbled upon No Meat May’s papaya salad that is simple and authentic, like in Thailand. No Meat May keeps it to the basic and uses the basic ingredients like what I seen in food stands in Thailand. In a pestle and mortar, she crushes nuts, green beans, and tomatoes, combined with sugar, soy sauce, and juice. By crushing and grinding all these ingredients together, the aroma and juices are release. This combines all the ingredients and makes for a wholesome experience. Finally, the grinded ingredients mixes together with the unripe papaya to create a salad. A salad that is juicy and filled with flavor.

No Meat May's Thai Papaya Salad

  • 3 tbsp palm sugar
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 pinch salt
  • 15 whole green bean
  • 7 whole cherry tomatoes
  • 1 handful peanuts
  • 2 whole red chillies
  • 2 cup green papaya
  • 1 cup carrot


  • Julienne papaya and carrots
  • In a mortar, add in palm sugar, soy sauce, lime juice, and salt grind with a pestle until they are well mixed
  • Add in green beans, cherry tomatoes, peanuts, and red chillies grind again until well mixed
  • Scoop out all the grinded ingredients and place into a same bowl with carrots and papaya
  • Toss and mix a bit to blend in the flavors to the papaya and carrots
  • Scoop out and place into a cabbage or plate 
  • Garnish with fresh lime and peanuts

What I Love About This Recipe for Thai Papaya Salad

What I love about this recipe for Thai papaya salad the most is how it sticks to its roots from Thailand. Its not a General Tsao or orange chicken for chinese food. Another bonus of it is how easy it is to make. The hardest part is gathering all the ingredients together and that isn’t exactly hard if you know where to look. Its even simple to adjust to your own taste. Add more sugar if you have a sweet tooth or like me, add more red chillies to more of a kick. Its refreshing and juicy that’s a perfect balance to carb heavy foods like pad thai or even meat-filled meals like Korean bbq. 

Add together the tomatoes, green beans, palm sugar, lime juice, and salt. Grind for a minute to release juices.

Scoop out everything and add it together with the shredded carrots and papayas.

Throw and mix together.
