Normal stir-fried noodles are thin in nature and don’t have the same bite as stir-fried udon. Udon noodles even work better stir fried because the thicker strands holds up better. Super thin noodles then to stick to the pan and break and when scoop it out.

Udon noodles are also a bit tricky because of the thickness. If it isn’t fully cooked or isn’t seasoned enough it will taste quite doughy. There’s nothing weirder than eating strands of raw dough.

However when well seasoned they’re a great stand alone, like garlic butter fried rice or spicy fried rice. This means they’ll be ideal for vegetarians as it won’t feel like dull without any complementary meat or veggies.
